Gluten Free ANZAC Biscuits

Ingredients
  

  • 200 g melted butter
  • 1/2 cup rice malt syrup or honey
  • 2 tsp bicarb
  • 1/4 cup coconut sugar
  • 1 cup buckwheat flour
  • 1 cup desiccated coconut
  • 2.5 cup rolled oats
  • 1 cup mixed seeds, chopped nuts or choc chips (sunflower, pepita, linseed, almond)
  • 2 tsp cinnamon

Instructions
 

  • Preheat oven to 180 degrees C and line 2 trays with baking paper
  • Melt the butter and honey on the stove top over a low heat, add the bicarb and mix in until dissolved and foamy
  • Add to the rest of the ingredients and mix through well
  • Wet hands and squeeze the mixture into balls and flatten slightly into a patty shape
  • Space well on the tray- they spread!
  • Bake 10-15 mins or until golden. The longer you bake the crispier they will be
