You’ll never make another biscuit for a celebration again!
These cookies first came into my life when I was a bridesmaid for one of my best friends Lauren; for her bridal shower we put together a recipe book from all of the people there and family members.
Lauren’s Mum gave me the “Grandma’s Honey Biscuit” recipe to add to the book and I thought they sounded great so I took a copy of the recipe for myself!
I have used these biscuits for baby showers, birthdays and every Christmas since it’s been in my life. They work well with both fondant and royal icing and are so quick and easy to make.
I have made a variation of coconut sugar instead of white sugar so if you prefer to be traditional then go for it!

Honey Biscuits
Ingredients
- 125 g softened butter
- 1/4 cup + 1tbsp honey
- 1/4 cup water
- 1/2 cup coconut sugar
- 2.5 cups plain flour
- 1 tspn cinnamon, mixed spice, ground ginger, ground cloves 1 tsp of each spice
- 1 tspn vanilla
- 1 tspn bicarbonate soda
Royal Icing
- 1.5 cups icing sugar
- 1 tsp lemon juice
- 1 egg white
- 1 tspn natural colour blue pea powder, blue spirulina, green spirulina, beetroot powder, dragonfruit powder, tumeric
Instructions
- cream butter and sugar- add honey and water
- gradually add mixed flour, spices, bicarbonate of soda
- leave on the bench to stand overnight
- roll mixture out on floured surface (portion at a time)
- Bake 10-15 mins, 180 degrees c until golden brown
Icing
- using beaters mix all of the icing ingredients together until smooth, if its a little thick just add more lemon juice.
- ice all of the biscuits with the white icing
- with the left over icing, seperate into bowls and use mix through your colours
- spoon the mixture into a plastic bag and snip the corner
- pipe the icing onto the cookies
