Hot Cross Buns

Ingredients
  

  • 1/2 cup warm water
  • 3 tsp yeast
  • 4 tbsp coconut sugar
  • 1/2 cup buckwheat flour
  • 1/2 cup organic plain flour
  • 1/2 tsp salt
  • 2 tsp coconut oil
  • 1/3 cup currants
  • 1/3 cup chocolate chips
  • 1 tsp ground cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp ginger

Cross

  • 3 tbsp plain flour
  • 6 tbsp water

Glaze

  • 2 tbsp coconut sugar
  • 2 tbsp water

Instructions
 

  • add the water and yeast together in a bowl and allow to activate for 5 mins
  • add in the rest of the ingredients and mix until it comes together
  • turn out the dough onto a floured board and knead for 5 mins
  • place into a clean bowl and cover with a plate or cling wrap, place in a warm spot for 30 mins or until doubled in size
  • knock down the dough and form into 6 balls
  • place on a tray lined with baking paper or in a dish
  • cover with a damp tea towel and allow to rise for another 30 mins or until doubled in size
  • preheat the oven to 200C and make the cross mixture. Add the mixture to a piping bag or into a plastic bag with the corner snipped off
  • Add the cross to the buns and place in the oven to cook for 15 mins
  • Once out of the oven glaze immediately with a pastry brush
  • Serve with butter
