Strawberry Swirl Ice-Cream
Ingredients
- 300ml thickened cream
- 2 egg yolks
- 1/4 cup maple syrup
- 4 tbsp strawberry puree
Instructions
- Start by making the strawberry puree (I used a whole punnet) by chopping the strawberries and placing into a saucepan on low heat with a little water.Bring to a simmer and when cooked, use a stick mixer to blitz.Place in the fridge to cool
- Beat the cream, egg yolks and maple syrup in a bowl until the cream begins to thicken- don't over beat or it's hard to spoon into the moulds
- Add in the puree and carefully fold through
- Spoon the mixture into the moulds and place in the freezer for 6 hours
